Northern Ireland: Portstewart, Giant's Causeway.
Brazil/Argentina: Iguazu Falls (Foz de Iquazu), Florianopolis.
In China you should go to Dali, it's been awhile so I don't remember exactely where it is - it's a ways from big cities, but it's beautiful and a wonderful little city to visit. Also the Karst are spectacular. Have fun!
I meant Karst mountains in the previous note - try to take a boat ride down them.
Ireland:
Spend a day in Kilkenny, cool town and awesome castle grounds. Also, if you head south to Cork take a side trip to Covh (pronounced "cove").

Caryn let me know you might like suggestions in Italy! My recommendations are (assuming you might do the biggies separately):
Siena - and the accompanying vineyards. Go up to the top of the companile for a gorgeous tuscan view.
Orvieto (similar to Siena)
Amalfi Coast (i loved the island of Ischia)
Cinque Terre - I stayed in Monterosso al Mare - gorgeous hikes back and forth between the 5 towns along the sea
Sicily - cheap and rustic, but still very Italian. Taormina is gorgeous, and I loved seeing the greek ruins at Agrigento. And loved the beach life at Mondello, near Palermo.
Lake Como (or less visited but just as gorgeous, Lago Maggiore. If you go there, do the boat tour to isola d'pescatore, isola bella)
I vote for Zakopone, Poland. Meet the mountain folk of Poland (Gurula's). It's on the Southern end of Poland a short train (3 hours i believe) ride from Prague. I'd also suggest Kolobrzeg which is on the Baltic sea near the German border. Both are small towns in Poland that aren't huge tourist traps (they are still a little touristy) and will give you a good feel of Polish culture!
Go back to the UK - there's SO many places to see!
